Spilling the Beans

...on mushroom coffee.

Not all that long ago, coffee was simple: beans, water, milk, sugar, etc. Of course, it’s since exploded into thousands of exotic, tasty, and sexy cold brew offshoots.

But shrooms?

7:17AM: “Um, yes, I’ll have a lion’s mane, coconut, and chaga latte with a dash of turkey tail flakes.”

While the birth of mushroom coffee goes back to ancient China, it wasn’t until recently that mushroom coffee became a trendy beverage option. This shift, mainly due to the work of Finnish entrepreneur Tero Isokauppila, who founded the company Four Sigmatic, which sells mushroom coffee and other mushroom-based products, is growing.

Mushroom coffee has gained popularity mainly due to its potential health benefits. This fungi-infused brew has been making serious waves, with the global mushroom coffee market expected to hit a whopping $4 billion by 2030. The medicinal mushrooms used in mushroom coffee are believed to have antioxidant and anti-inflammatory properties. Often advertised as a healthier alternative to traditional coffee, mushroom coffee is a beverage made from adaptogenic mushrooms and coffee beans. Adaptogens, which can come in the form of herbs and roots as well as mushrooms, are purported to help the body manage stress. The belief is that the way your body’s hypothalamic-pituitary-adrenal-gland axis interacts with the adaptogens helps achieve a restoration of balance.

Though mushroom coffee tastes similar to regular coffee (it tastes like coffee because it is coffee!), it contains less caffeine. However, mushroom coffee does have a distinctive flavor that can vary depending on the blend, but typically has an earthy, somewhat umami taste of mushrooms with the familiar bitterness of regular coffee. The mushroom notes are subtle and don’t overwhelm the coffee itself. The flavor isn’t as intense as a straight mushroom or a strong mushroom soup, but rather blends into the coffee base. Adding milk or sweeteners mellows down the earthy flavor. Mushroom coffee also has a lessened caffeinated kick which leads to sustained energy levels without the afternoon crash.

Today, coffee makers across the country are working with a myriad of mushrooms—chaga, cordyceps, lion’s mane, turkey tail, reishi, phellinus, agaricus—making it a dazzling new day for mushroom coffee drinkers. Here are a few of our favorites.
